While staying at the beautiful Lavendel Cottage in Sedgefield, we just had to visit our favorite restaurant in the small town. Of course, we are talking about VDM Bistro, with steak and mash so good I am still dreaming about it. I plan to return as often as I possibly can. Let’s dig in!

Eating Steak at VDM Bistro
Every moment we spent at Van Der Merwe (VDM) Bistro, cause that’s what it stands for, was beautiful. First off, the waiter and staff in general, including the chef, are friendly and inviting, and so is the Chicken Livers starter I had, as per the image above.
Not too spicy, but with a good kick, the Chicken Livers starter in an old-school tiny potjie was to die for, coupled with toasted ciabatta bread.
Nothing, however, compares to the main dishes. Anyone who lives or is vacationing in or around Sedgefield should try the Ribeye with mash. The steak was expertly prepared to my instructions of “medium” and melted in my mouth, with a crispy crust on the outside, confirming the chef had done this a thousand times perfectly.
With velvet mash on the side, I just had to devour the whole plate. I added a cheese sauce (homemade and so tasty) but it wasn’t really even needed due to the juiciness of the steak and the perfect creamy mash. Both myself and my fiance just demolished our mash and steaks. I’ve never seen my fiance enjoy a meal quite as much as at VDM Bistro, which is the best possible compliment I can give.
The entire atmosphere sings upmarket dining, but the staff are still down-to-earth. Impressively, the waiter remembered us and our story of getting engaged one year after our first visit. That level of customer service is, without a doubt, incredible.

VDM Bistro Review Verdict
We will eat at VDM Bistro every time we stay in Sedgefield or any surrounding town, or even when we are just passing by at an appropriate time. We’ve had two experiences at VDM Bistro, and the steaks, mash, and starters are just perfect. There’s no getting around the fact that I’ve never had such a fantastic dining experience and warm reception from the staff. I have no choice but to give them a perfect score.
